Cos lettuce, green mango, sesame dressing, mixed herbs
Roasted Sesame Dressing
Ingredients:
- 500g palm sugar
- 100ml water
- 100g roasted sesame seeds
- 150ml gluten-free soy sauce
- 500g tamarind purée
- 100ml lime juice
Method:
- Combine palm sugar and water in a medium pot. Bring to a boil until the sugar dissolves.
- Reduce the mixture until thickened, being careful not to burn it.
- Add soy sauce and tamarind purée. Bring back to a boil.
- Stir in the roasted sesame seeds and set aside to cool.
- Finish by adding the lime juice.
Salad Assembly Ingredients:
- 1 baby cos lettuce, leaves separated
- Sprigs of Vietnamese mint
- Sprigs of regular mint
- Sprigs of dill
- Shiso leaves
- Snow pea tendrils
- Chickpea tendrils
- 1 green mango, shaved with a peeler
Method:
- Trim cos leaves to size and pick all herbs.
- Arrange cos leaves at the base of the plate in a V-shape.
- Layer a mix of herbs and shaved green mango on top.
- Season with salt, pepper, lime juice, and lime zest.
- Drizzle generously with the roasted sesame dressing.
